Cinnamon Rolls

Hello everyone! I hope this day brings you happiness! I am going to share a cinnamon roll recipe with you today and maybe that will lift your spirits. I am pretty sure that this recipe is from The Pioneer Woman, Lee Drummond so all the credit goes to her for this awesome recipe.

Ok ready to start now? I just use self- rising flour for about everything I make. So here is my recipe.

4 1/2 – 5 c. flour

1 can of evaporated milk at 110 degrees F.

1 tsp. sugar 2 1/2 tsp. yeast

1/3 c. dry milk 1 1/2 tsp. salt 1 c. sugar

2 Tbsp. oil 1 egg at room temp.

Add 1 tsp. sugar and 2 1/2 tsp. yeast to your 110 degree evaporated milk. Wait 7 minutes until foamy. This tells you that the yeast is still good!

In a large bowl have your dry mixture of 4 1/2 c. flour 1/3 c. dry milk 1 1/2 tsp. salt 1 c. sugar and 1 room temp. egg whisked. And 2 Tbsp. oil.

Now you can add your wet yeast mixture to the dry flour mixture. Stir it until just mixed together and put saran wrap over the top of the bowl and let this sit out on the counter for 15 minutes. (Doughy will be tacky) so it will be hard to work with. But worth it, in the end results!

Sprinkle counter with a very small amount of flour and start kneading the dough. Use as least flour as you can get away with, but you will have to be using small amounts so this will not just stick to your hands.

Knead for 15 to 20 minutes until your can do the window pane test. Which is when you can stretch some dough and see your fingers through the dough. Time to cover with wrap or a clean kitchen towel and sit in the warm oven.

This is my special way to make my breads and rolls rise!!! I always heat up my oven to 200 degrees for about 5 minutes and turn the oven OFF. I do this step every time the rising times come up. And it works very well for me as you need a warm place for dough to rise.

Now put dough into your oven with it warmed up and turned off. Let rise 1 hour or more until doubled in size. Have a stick of butter sitting out to soften up while the dough is busy in the oven.

The filling recipe is 1 stick soft butter 1/1/2 c. brown sugar 1/4 tsp. salt and 1 1/2 Tbsp Saigon cinnamon. Which has an amazing stronger cinnamon flavor. I ordered it from MySpice.com

Punch down dough now. Put flour on counter and roll out till it is 3 inches wider on each long side, than a 13×9 baking pan or dish.

Now use your hands and slather the dough with butter and whisk other ingredients of filling together and sprinkle on top of butter.

This is a long recipe! But this is what you are aiming for!

Now you start on the long edges and roll up the dough like a tootsie roll. Pinch the edges together with your finger tips. If you want huge cinnamon rolls just aim for 9 slices by using dental floss to cut with.

Time to heat oven for 5 minutes at 200 degrees and turn off. Take a 4 oz package of cream cheese out of the fridge to soften up.

Put these on a wax papered pan and cover the rolls with kitchen towel again and let rise for an hour., in the oven. Bake at 350 degrees for 20 minutes.

Only one more step! I promise you!

While these are baking Use a medium bowl for 4 oz cream cheese at room temp and add in 3 c. of powdered sugar and 1 tsp. of vanilla and add milk by the Tbsp. ONLY while you are mixing up this delicious frosting to get to the right consistency top pour over those hot freshly baked cinnamon rolls!

I made these for a Community Dinner so I had to make 2 13×9 glass dishes. This turned out to be the only dessert that was brought to the dinner, but I don’t think everybody minded at all! And they were happy.

Peanut Butter Cookies

The best ever.

I am giving to you one of my very favorite recipes of all times!

I adore these and whoever gets to taste these just can’t get enough. So be warned that these are addicting.

The recipe: 1 c. peanut butter

1 c. sugar

1 egg

Mix all this in a small bowl and refridgerate for 30 minutes. Then roll out into little balls and press them down slightly with a fork.

Bake on ungreased cookie sheet at 350 degrees for 10-12 minutes. let sit on pan for 30 minutes and then remove cookies from pan.

Homemade Pie Crust

A pretty picture.
This is my pie crust which was delicious with fresh home-made cherry pie filling in it. But it sure is not as pretty as the first picture.

But this recipe for pie crust is my go to for every pie that I make. It is the best pie crust that I have ever made.

Making a pie crust from scratch used to intimidate me, but not anymore. And if I can do this so can you! And boy is it ever so fresh and the taste is out of this world!

The recipe is: 1 c. self-rising flour

1 tablespoon of baking powder

1/3 c. of butter or shortening 1 tsp. sugar

1/4 c. ice-water

Put your flour into a large bowl and add the sugar and baking powder.

Whisk together well and add in the butter. Use a pastry cutter to cut the butter into the flour until it looks like little pea sized pieces.

Use a spoon to mix dough together as you add the ice-water by the tablespoon just until dough makes a ball that sticks together. It may only take 3 tablespoons of water or slightly more. But not the whole cup.

Now I put this in a covered bowl in the refridgerater for 30 minutes. Then toss some extra flour on the counter and have extra flour on the side if needed. Take the dough out and put on scattered flour on the counter and get out your rolling pin.

Start rolling the dough out from middle to sides but do a little spin turn as you are doing this constantly so that dough will roll out thin and not be overworked and tough. You will need to be throwing a little flour over the dough as it becomes sticky so it won’t stick to the counter and rolling pin.

When it is the size to drape over your pie pan then you roll it up on the rolling pin and put it in the pan. Now you remove the over-hang dough and use fingers to crimp the edges or a spoon handle could make it crimp pretty also. Use a fork to prick holes in the pie shell and bake it at 375 degrees for 10 minutes.

Now, this shell is ready to fill with coconut cream pie filling as I did in my last created pie shell that I made or any other filling that has to be baked. You have done it now! You are on your way to many beautiful pie moments.

Vanilla Butternut Cake

Check back later for a surprise recipe. Ok it’s here now! This one is called Vanilla Butter Nut Cake. I t is an old recipe from way back. When you smell this one baking in the oven’ it will drive you wild and it’s that good so it does not need any kind of topping or frosting.

This one stands on its on and takes all the compliments to itself!

Forty years ago my Mother-in-law made this special cake for her Son as it was his absolute favorite. He is gone now but Dear Sweet Alice is still around and I know she is still cooking up some wonderful meals as she did way back when!

Now all of you know that I love to put the photo up on my blog for you to see the results but I just can’t be eating everything I cook up so you will have to take my word on this one! It will be worth it!

Ingredients are:A bottle of Imatation Vanilla Butter and Nut Flavoring

(I find this at Save-A-Lot) and have seen it at other Grocers.

1/2 cup of shortening (Crisco). 2 sticks butter (Cream this toghether with a mixer).

3 cups of sugar with 1/4 tsp. of salt (Add this to mixer).

6 eggs (Add one at a time).

3 cups of self-rising flour (add to this) 1 cup of milk and two Tablespoons of flavoring from the bottle.

Add all this gradually into the mixer bowl. Heat oven to 325 degrees and ( grease very well) and flour a tube pan (like the fruit cake pans). Pour into prepared pan and slowly bake for 70 minutes ( 1 hour and 10 minutes). Let sit and cool down at least 25 minutes before you remove from pan.

Again this cake stands on it’s own, it is that good! Needs nothing else with it. I hope you will try this awesome cake as it it a fabulous recipe to have and to cherish! Love and Hugs from me to you!

Wild Berry Cobbler

Tuesday,s Wildberry Cobbler.

I,m ready now! Preheat oven to 350 degrees.Put 1 stick of butter into a 9×13 baking dish and put in oven for a few minutes to melt. Then take it out is you are not ready yet! But you should be ready as this is so easy! Just have all ingredients measured out and ready on the counter.

Ingredients are: 2 c. of chopped strawberries and 2 c. of blueberries chopped up.

2 cups of flour with 1 Tablespoon of baking powder

1 cup of sugar with 1 Tablespoon of (Siagon) cinnamon. Its so mucher richer tasting than regular cinnamon.

1 stick of butter and 2 cups of milk with 1 Tablespoon of Imatation Vanilla, Butter and Nut Flavoring.( Save A Lot) is my source.

Ok take dish out of oven if you have not already done so. Pour berries over butter. Mix dry ingredients with a whisk. Add in wet ingredients and flavoring. Mix well by hand and pour on top of everything else. Bake 350 degrees for 45 minutes. And ENJOY!

Peach Sorbet

I went to a produce store the other day and I saw some bags of peaches marked down to a dollar each bag. They just had a few soft spots on them, so I washed them and cut off the spots, along with peeling them also.

It,s kind of funny that I found those peaches, as I had been thinking of a peach sorbet, which is like an Italian Ice! I paid a dollar a bag and ended up with around ten peaches. Oh the heavenly smell, as I was slicing into them! Smelled like heaven to me!

I added a cup of sugar to this bowl and one half cup or water. Then I put this mixture through my food processor in two batches, as I have a small processor and processed until smooth.

Then I poured everything into a quart plastic covered bowl and put it into the freezer for eight hours. The photo will show only a third of the sorbet, as I shared with two of my friends also.
