Old Fashioned Cinnamon Toast

Good old cinnamon toast was a childhood favorite of mine. #cinnamon-toast #breakfast

Good morning everybody! Of course, it’s lunchtime, here. But, my mind is on this morning and a knock on my door. I almost fell out with the surprise that was waiting there for me. For Me? It was a Valentine’s Day surprise and boy, was it.

I was not expecting to get anything for Valentine’s Day and here is a big bouquet of beautiful flowers. Here is a photo of them.

It is a beautiful and overcast, rainy looking day for North Florida today.

Everyday is beautiful to me and I hope that yours will be also.

I wanted to revisit the past today, so here is a simple recipe from my child-hood past for you. Thou, mama never used hot dog buns. I do not like to waste food so the hotdog buns were it!

Some kind of bread

1/4 c sugar

1/2 TBSP cinnamon

soft butter

Mix sugar and cinnamon in small container.

Toast your bread and butter it lavishly and spoon some cinnamon sugar mixture over top of toast and shake off, what does not stick to the toast. Now enjoy! I am tempted to fix me some for lunch, just so I can smell the awesome aroma, wafting through my house!

I am sorry that this is such a simple recipe but sometimes the simple things in life are the best. If you haven’t tried this one, then I hope that you will. And if you have, it just might bring back some memories from your past.

Hash Browns In The Air-Fryer

Air-Fryer Hash-Browns that are crispy and not soggy

Hello, everyone on this North Florida’s, second rainy day. But, I love the rainy day! That was in a song from back yonder, somewhere.

I hope that your day is good, as I always try to make every day good. Because you never know when it, may be your last. So I don’t waste it.

Today is just a short post to show you what the air-fryer can do. And best of all, you set it and walk away while it cooks itself. You do come back at half-time to flip it over.

If you follow my blog, then you have seen my air-fryer, many times. As it is a camera loving selfie. It lives between the coffee pot and the food processor, along with the coffee bean grinder. All items that I simply could not live without them in my kitchen. You can see that I am a kitchen appliance type of girl.

So, you know that I love spending time in the kitchen!

I have found out that it is best to cover the bottom of the air-fryer basket with foil as it makes it a breeze to toss the foil and wash the basket in the dish-water.

I also found a tin type, hair-spray bottle at the Dollar Tree store to keep olive oil in to spray foods that require a spray. Price check these oil spraying bottles and you will see that I got mine for a bargain. I did not use the spray on the hash-browns as they already have enough oil in them.

I only plug the air-fryer into the wall socket, when I am using it, Just as a safety habit like my coffeepot also.

When I plug it in, it comes on and I push the start button it shows you the minute button so I set it to 14 minutes. It also shows 370 degrees, which I usually leave alone, as it does a wonderful job.

Now you just walk away for 7 minutes and come back and flip the hash-brows over. I use two spoons to flip each one over so they don’t break-up. And when the buzzer dings, they are ready for some salt and eggs, etc. etc.

I love my air-fryer and it saves me a lot of time from standing at the stove or even, turning on the oven for hot summer days, which will come soon enough.

Let’s Have A Picnic Together

Hello everyone! I hope your day is rolling along nicely. I know that mine is. October is flying by, almost faster than the eye can see. But I am loving this October windy day and I do so hope that you are too!

As I was starting out a prep for this day, I thought about this thought. Why don’t we all have a picnic on this beautiful day! So this is what I am bringing to the picnic. I am sorry that you can’t comment on this blog, my Son set it up for me and we are the only ones that can. But why not take this idea to your friends!

After lunch-time, I will take the 24 scrambled eggs that I cooked with just a tiny smidgen of oil for the pan and put them all on my dehydrator trays and let run for maybe 6-9 hours. I will know when they snap like a stick, that they are dry. Then I will let them cool down and then in small batches, I will run them through my coffee bean grinder until they are fully powdered.

Next to make sure that they are completely dried, I will set my oven to 170 degrees and in about 5 minutes the eggs will go in on a cookie sheet and stay 15 minutes. If very dry stop now, if not go for 5 minute time sets and re-check. It’s a bit of work but you want to have the best preserved food tht will keep for many many years if you happen to want it.

You can buy the 10 lb cans for $30 to $50 if you wish also. But I am very frugal and like to do my own foe $2 for almost a quart jar full. I do use a moisture pack that I make and put in the jar. For now he jars are closed, but when I get my jar lid sealer for my brake bleeder. Then I will use it to remove all oxygen from my jars of powdered eggs and re-use it for when I open the jar, to re-seal it again.

How to dehydrate eggs

Hello everybody, I hope this day finds you well and happy. There is so much going on in our world at this time, that I know that there are so many that are blown away in their minds. If I did not have the peace of God that lives in my soul every waking moment, I couls easily let myself fall into the deep void of confusion and fear of what is to come.

All I can say, is to keep God in your lives and you will come through anything, and with only the peace that He gives to you.

Even though I love God with all my heart and soul. I still believe that we should prepare for what may be coming. None of us know, what that will be. But we can watch and learn, always be learning.

Ok, here is my food prep tip of the day. First I made the biggest mess that you will hope to never see! I used raw eggs in the oven on trays that were lined with wax paper. I used a low temp of 170 degrees for 10 hours. DO NOT DO THIS!

Two dozen eggs at 10 hours later, will give you melted wax paper onto concrete hard eggs. And not to mention the concreted eggs that were stuck to 4 huge pans, hours of soaking and scrubbing. And those eggs went into the trash.

So I decided to go another route with dehydrating the next time. This is how I do them now. I used 30 eggs and put into a big bowl and whisked them up well, with nothing added to it.

I scrambled the eggs in a large pan and let cool off. hen I used parchment paper “Hey these are not gonna take 10 hours” so the paper won’t be a problem. Also I used my dehydrator this time.

The eggs will dry very hard, so you do not want huge pieces of egg, as it might break your little coffee grinder. So break them up small. You will be glad that you did this step.

I don’t remember how many hours, 6 to 8 hours. I have a powerful dehydrator. I think 6 hours. When they are unbreakably hard and dry.

When cooled off. If they are very very dry, then use your coffee grinder or what ever else you have to grind to a fine powder. Store in quart mason jar with an absorber in the jar. Date the jar and label. Keep in dark cool place. These should store for 5-10 tears unopened. Once open, store in refridgerator for 7-30 days.

To reconstitute, you use 1 tbsp of egg to 1 tbsp of warm water and whisk and sit for 5-10 minutes before cooking as scrambled eggs. Fine for baking also. 1 tbsp. of egg powder for each egg needed. Remember this, these will not be as good as a fresh egg. This is for WTSHF and you are grateful to have an egg to cook!

Sausage Gravy

This is a really good breakfast or supper recipe. Especially if you make up a pan of biscuits to go with this. If you wish, you can check out my biscuit recipe and use it.

Ingredients are: 1/2 lb fresh sausage or broken patties

3 tablespoons flour 2 c. warm milk 1tsp. salt

2 tablespoons of grease a sprinkle of black pepper

I use a cast iron skillet as it is my favorite pan to cook in. Brown up the sausage, chopping it smaller as you go. When browned add 2 tablespoons of flour and be stirring this in. If to dry, then add 2 tablespoons of grease to pan. Then add the 3rd tablespoon of flour to pan. Keep stirring and coking on medium heat to get the flour cooked.

Lower the heat now too a low setting, and begin adding the warm milk by small amounts at a time. If it gets too thick,just add in more of the milk. You may not need all of the milk. But you will use most of it. Now when done, just sprinkle with black pepper and enjoy over those biscuits that hopefully you made, and enjoy.
