Sausage Pizza

Pizza, made with Nettle’s Sausage.
Homemade pizza cooked at 550 degrees for 10 minutes.

I hope that all is well with you and your families.

We are living in troubled times as each day goes by. So I wish you, health.

Here is the rest of the sausage pizza recipe that I promised to give to you.

Use 2 large round pizza pans and oil them. Toss a little cornmeal across both pans. If you only need 1 pizza then cut the dough in half and freeze half of it in a freezer bag.

Otherwise, half the dough and roll out on a lightly floured countertop until the right size for a pan. Fold dough over one way and then the next way and carry to the pizza pan. Center dough and stretch a little to fill to the pan edges. Pinch up a rim.

Use half of the jar of Ramos pizza sauce (Publix) on each pizza and sprinkle half of the cheese on each pizza. (But, save a small half handful for the top of each pizza). I did not use any other seasonings! The jar of sauce was spot on!

I used Cabots extra sharp cheddar cheese as I reached this cheese first, in my deep freezer. 2 1/2 cups shredded or crumbled apart as freezer cheese does do this.

3 links of Nettles sausage links de-skinned and cut into chunks or 1/2 lb patty sausage. For 1 pizza. Cook this! Drain and put on top of the bottom cheese layer. Now if you want one pizza for pepperoni then add large pepperoni on one of them and sausage on the other one.

Toppings of your choice—

Turn on the oven to 550 degrees now!

Prep your black olives-onions-mushrooms-bell peppers. Arrange the prepped veggies on the pizza. You could add melted butter and sprinkle parmesan cheese around the crusts! But I did not even miss this! The pizzas were so very good. I ate pizza for 3 days.

Bake at 550 degrees for 10 minutes, standing right there because you have to rotate the pizzas on your oven shelves at the 5-minute timing mark.

This was the best pizza that I have ever eaten! I have made many pizzas as it is a shame to buy pizza when you know how to make it. And I have tried many sauces but this is the winner!

Pizza Dough

Homemade pizza dough for 2 large pizzas.

Hello to all the world, this glorious morning!

It is a beautiful day in North Florida, this morning. I wish you the very best for your day.

I just wanted to share a pizza dough recipe with you that turned out to be just right. Chewey and then crunchy on the crust.

Ready for this?

I usually like to prep, before I am going to cook a meal as it saves so much time for me. So I prepared this dough recipe in the morning and put it in an oiled bowl with the dough turned over and over to coat with the oil and left it there until I was ready to cook pizzas. Oh, it did rise very nicely.

It could be the same day or even the next day! But, if overnight then I would saran wrap (cover) the bowl of dough.

Onward to the recipe now!

You will need 1 pkg of yeast.

1 1/2 c of extra warm water

3 tsp of sugar

Now put these 3 items in a bowl and let sit for 12 minutes. Stir the yeast in very well. You should see it become foamy so you know the yeast is alive and well. If not then use new ingredients and start again!

4 cups of self-rising flour (what I use). Plus 1/2 cup of flour on the side to use with the dough kneading.

1/3 cup of olive oil or a little less. Use a little of this to oil your dough storage bowl for the refrigerated dough for later and if cooking pizza today then slightly oil two large pizza pans, and if you wish to toss a sprinkling of cornmeal across your pizza baking pans, now is the time. This is what the pizza places do!

But alas, today is the dough recipe day from me to you!

The pizza-making part will come on Tuesday unless I decide to surprise everyone early. But this will be worth the wait! I will say that you could be purchasing some Nettles sausage and also extra-large pepperoni. Also, a good time to purchase your favorite toppings (small amounts) and cheese. Publix will have the pizza sauce that I use. a 13 oz jar of RAO’S homemade pizza sauce (all-natural premium pizza sauce).

Back to the dough, use a large bowl, and combine the foamy yeast mixture with the 4 cups of flour and the olive oil. Spoon stir just until mixed. With that 1/2 cup of extra flour, throw some on the counter (a little bit). Place the dough on the counter.

Start kneading the dough together by hand and continue for 8 minutes. Just punch it down and fold it over and over. There is nothing like the feeling of kneading your very own dough! This has to be a way back in the time memory for many of our Ancestors! That is the entire reason that this Blog is based on! To keep old-time memories, alive!

Also some of the new ways of learning things of life.

After the 8 minutes are up, then place the dough into the oiled bowl and turn it over a few times. Place in the refrigerator until you are ready to make pizzas. This makes 2 large ones.

Fried Plantains

This is one way to prepare plantains to make a special meal.

I hope that this awesome weather is treating you right. Yes it has started to cool down here in North Florida and if I could I would turn cartwheels, down the street!

I have had a craving for a Caribbean shrimp dinner, so I began prepping and it did take me 2 hours to prepare and finish cooking the dish. So you would do well to start prepping the day before and then this would go together really fast.

For this post, I am showing you how I prepared the plantains by washing and slicing and then peeling and frying them. They do not have to be fried to a dark brown as they lose some of their sweetness.

When you buy them they are like green bananas so if you see some with yellow and brown on them, pick those. Or let them hang around the kitchen until yellow and brown, they will not be soft like bananas.

You could also prepare the mango salsa the day before if you wish to make the recipe (August 2021) archives.

Roast Beef

Leftover roast beef with gravy to go over rice for lunch.

Good Morning All on this beautiful North Florida day with its Harvest Moon.

I hope that your day goes well and that your family and friends are doing well.

I am just popping in with a small meal deal that grows into two meals from one-pint jar of roast beef that I canned in 2020.

If you want the recipe for pressure canning roast beef, then look in my archives for May 1st, 2020. It’s in there. But be warned if you are squeamish that the photo is of raw meat in canning jars that are ready to go in the canner. One of the easiest things that I have ever canned.

My two recipes that I made from one jar, which was a wide-mouth jar that holds a little more than the regular jar, in my opinion. Were roast beef 1/4 sub with the contents of the jar heated up with some seasonings. You should know me by now, Accent and Greek seasonings along with onion powder and salt with pepper.

I did not get the Cabot very sharp cheddar cheese thawed out in time so I had to use a slice of Velveeta (cheap brand) from Save A Lot. But it was well worth it! I had a loaf of French bread that I had cut into fourth’s in the freezer so I used a fourth size chunk of the bread that I did have thawed out, along with Gulden’s Spicy Brown mustard and mayo.

Throw in a Walmart brand of can coke and you have yourself a fine meal or you could feed two people on this one jar meal in a few minutes of your time.

But as there is only I, the leftovers will be tomorrow’s meal. So I took the meat out of the pot and made gravy by adding in some seasonings as when I can meat I just can it plain and season when I open the jar to use it. I just used 3/4th cup of cold water and stirred in 2 1/2 TBSP of flour (or you could use cornstarch). Whisk together well before adding to the warmed-up broth in the pot, from the pint jar. Add in the flour and stir while you cook it a couple of minutes. If too thick then add a little water sparingly. Add the meat back into the pot with the gravy and it is ready to eat now.

I will prepare a cup of parboiled rice with 2 cups of water, that is brought to a good boil and then lower the temp to 3 1/2 and cook with the lid on the pot for 25 minutes. If the water is gone then it is ready to eat.

So my lunch today will be a nice one, with a veggie

I do hope that you will get into canning, little by little as it is costly to start out so that you can enjoy some fine and fast prepared meals.

A Frosty like Wendy’s

Good Afternoon, All!

I hope that your day was well!

North Florida is in for a rainy and stormy spell as I am doing my laundry and taking time out to write this post. The bottom dropped out as I was walking to the laundy-mat, with my umbrella of coarse.

Hopefully it won’t get worse, when I have to walk back down there to start the dryer.

I have a little treat of a recipe for you today as I did not get around to posting yesterday. I wish I had some ice-cream!

This is a Frosty like you can buy at Wendy’s.

All you need is 2 cups of vanilla ice-cream with 1/2 cup of milk.

Add in 2 TBSP of Nestles Quick and put everything in the blender for a short while. This recipe makes 1 serving!

Peach Cobbler

Good afternoon, all. I hope your day was good!

It has been a cloudy North Florida day but still a nice day.

I just wanted to pop in and share the peach cobbler that I made on Monday.

This is an easy and cheap recipe to make.

You will need 2 15 -oz cans of drained sliced peaches.

1 cup of flour 1 cup of sugar 1 stick of butter.

Turn oven on to 400 degrees and place the stick of butter in a 13×9 size baking pan. Let butter melt and take the pan out of the oven.

Put the flour in a big bowl and start with a cup of water and stir it in the batter. You will need to add more water, until it is a pourable and thick batter.

Add 1 TBSP of Almond extract and 1 TBSP of Coconut extract to the sugar and add to the batter. Stir it up!

Arrange the peach slices over the butter in the baking pan and then just pour the batter over top of the peaches.

Bake at 400 degrees for 45 minutes and check to see if it is brown enough for you.
